Houttuynia and Plantago Egg Soup

Clears heat in the lungs and dispels toxic pus. It is beneficial to those suffering oily skin, maculae, acne or poor digestion with foul-smelling stools.

Fresh egg whites 4, fresh houttuynia 100g (or 20 – 30g of the dried herb), plantago 90g, sweet almonds 30g, red dates (pitted) and honey to taste.

1.Rinse the houttuynia and set aside. Rinse the plantago, almonds and red dates, and place in a pot with an adequate amount of water.
2.Bring to a rolling boil, then simmer over a low fire for 60 minutes.
3.Add the houttuynia and simmer for a further 10 minutes.
4.Strain out the dregs. Add the egg white and sugar to the herbal liquid while it is still hot, stir well and serve.
