Rehmannia and Lotus Root Pork Soup

Clears heat, cools the blood, smoothens the complexion and moisturises the skin. It is recommended for those who are suffering from dry skin.

Fresh rehmannia root 30 – 60g, lotus root 600g, red dates 10 (pits removed), lean pork 250g, salt to taste.

1.Rinse each of the ingredients. Slice the lotus root and the pork.
2.Place all the ingredients in a pot with an adequate amount of water. Bring to a rolling boil over high heat, then simmer over low heat for 2½ hours.
3.Add salt and serve.

Tips for a Healthy Life
Vegetarians can substitute 200 – 300g of groundnuts or soya beans for pork in the recipe.
