Chicken Feet Soup with Achyranthes and Eucommia

Effects
This dish strengthens the muscles and bones and is recommended for those with wrist ache due to lack of physical strength and overwork. Also strengthens the waist and thighs of the middle-aged and elderly.

Ingredients
Eucommia bark 10–15 g, twotoothed achyranthes root 10–15 g, fresh chicken feet 100 g, black beans 15 g, red dates 15 g.

Preparation
1.Rinse the achyranthes root, eucommia bark, black beans and red dates. Steep in cold water for at least 1 hour.
2.Clean and blanch the chicken feet.
3.Place all the ingredients in a pot with an adequate amount of water. Bring to a rolling boil, then simmer using low heat for 2–3 hours or until black beans turn soft.
4.Add salt to taste and serve.

Tips for a Healthy Life
10–15 g of Chinese wolfberry or 15 g of dioscorea root may be added to enhance the nutritional value of this dish.
