Egg Soup with Lotus Seed

Nourishes the heart, calms and stabilises the mind. It is recommended for those who suffer from insomnia or interrupted sleep resulting in irritation.

Lotus seed with pith removed 10-15 g, eggs 2, rock sugar to taste.

1.Rinse the lotus seeds and place in a pot with an adequate amount of water. Soak for 1 hour.
2.Bring to a boil over high heat, then simmer over low heat for 1 hour or until lotus seeds are softened.
3.Add beaten eggs and bring to a boil once more.

Not recommended for those with abdominal distension or dry, hard stools.
